When I lived on our farm in Quapaw, Oklahoma we would take cattle to the stockyard to sell and that was the end of our contribution to the food cycle. The stockyards would sell the animals to meat processing plants and they would make their way via rails and trucks to various facilities around the country.
In the United States, about nine billion animals are slaughtered annually for food. I try not to think about the slaughtering process and I can't imagine what goes through the minds of the thousands of people who take care of this heinous part of getting food to consumers. This is a shout-out to all those who take care of the dirty work so the rest of us don't have too.
